What a Canadian food processor actually needs from a medical supplier — and what it does not. The line between environmental monitoring and sterilization monitoring is the one most often blurred.
Does a food plant need biological indicators?
Usually not for the reason people assume. In food processing, routine hygiene verification is done with environmental monitoring (surface swabs, ATP, indicator organisms) — not with biological indicators. Biological indicators exist to verify a sterilization cycle: they contain bacterial spores and prove that a defined cycle achieved lethality.
A food operation typically needs a biological indicator when it sterilizes equipment, utensils or packaging components and has to demonstrate that the cycle works — for example in a validated sterilization step, or where a thermal process must be documented. That is a different question from “is our plant clean today.”
Why this distinction saves money: companies that buy spore tests for environmental monitoring either over-pay for the wrong product or, worse, record a monitoring programme that does not demonstrate what their preventive control plan claims it demonstrates.

What has to be documented, and under which framework?
Canadian food safety obligations flow from the Safe Food for Canadians Regulations (SFCR) and, for most processors, a documented preventive control plan. Hygiene verification, sanitation records and equipment maintenance all sit inside that plan. Sterilization records — if you sterilize anything — are usually a separate equipment-validation record, not a PCP hygiene record.

Are spore tests the same as environmental swabs?
No. Spore tests are biological indicators used to verify a sterilization cycle. Environmental swabs sample surfaces for hygiene verification. They answer different questions and are not interchangeable.
Do we need a sterilizer if we run a food plant?
Only if something in your process must be sterilized. Many processors never sterilize anything and therefore need no sterilization monitoring at all.
